What is Industry Experience?

Industry Experience is the on the job training component of the Commercial Cookery or Back of House
(BoH) course you are studying. Industry Experience focuses on linking your knowledge and skills with
real workplace situations and will give you an important insight into your chosen industry.

Is Industry Experience the same as just working in a kitchen?

No, as opposed to simply working in a kitchen, Industry Experience enables you to put into practice and
develop the skills related to the units in your Commercial Cookery or BoH course. Students will also be
required to keep a Logbook of the tasks they undertake and the hours they work during their time with
an employer. Your Industry Experience will need to cover at least 4 different types of service period,
Breakfast, Lunch, Dinner and Special Events and should cover a wide range of food, responsibilities and
menu plans.

Do I have to do Industry Experience?

Yes. Industry Experiences a compulsory part of all SERO Institute’s Commercial Cookery and BoH
courses. You cannot achieve your certificate if you do not successfully complete your Industry
Experience Shifts/Service Periods.

When do I do Industry Experience?

SERO Institute currently runs three (3) major Commercial Cookery programs, each with their own
duration. Students studying any of the below courses can undertake either paid or unpaid Industry
Experience throughout their program.

For those students NOT working in an appropriate commercial kitchen setting, they will need to
organise the following with their Trainer and Student Support:

    Accelerated Culinary Program – 63 Weeks

  • 8 weeks Industry Experience that must be undertaken either on a weekly basis or during the 11
    holiday weeks once the student has been advised that they are ready for Industry Experience.
    Workplace Extended Program – 92 Weeks

  • 27 weeks of up to 20 Hours per Week paid or unpaid Industry Experience to be completed after
    all study weeks.
    Diploma of Hospitality ‐ Back of House Program – 71 Weeks

  • 4 weeks full time Industry Experience (approximately 200 hours) that must be undertaken either
    on a weekly basis or during the Study Schedule once the student has been advised that they are
    ready for Industry Experience.

How do I know if I am ready for Industry Experience?

Your Trainer will advise you when you are ready for Industry Experience and when you will be expected
to start. Some important considerations in work readiness are:

  • SITXFSA001‐Use hygienic practices for food safety
  • SITHCCC001 ‐ Use food preparation equipment
  • SITHCCC005 ‐ Prepare dishes using basic methods of cookery
  • SITXINV002 ‐ Maintain the quality of perishable items
  • SITHCCC005 ‐ Prepare dishes using
  • SITHCCC006 ‐ Prepare appetisers and salads
  • SITHCCC007 ‐ Prepare stocks, sauces and soups
  • SITHCCC008 ‐ Prepare vegetable, fruit, egg and farinaceous dishes

Your previous experience, current employment and confidence in the kitchen will also be considered by
your trainer when deciding if you are ready for Industry Placement.

Can I get paid during my Industry Experience?

Yes. Your Industry Experience can be either paid or unpaid so long as it covers the skills and knowledge
needed for the units in your Commercial Cookery or BoH course. SERO Institute will assist students to
find Unpaid Industry Placement if required.

If I am already working in a commercial kitchen, do I still have to do Industry Experience?

Yes. If you are already working in a Commercial Kitchen, you will be supplied with an Industry Logbook
that will allow you to record the hours you have worked and the tasks you have completed. You can use
this log book as a record of the time you have worked in Australia as well as evidence of Industry
Placement for units in your Commercial Cookery and BoH courses. If their current employment does not
cover the skills needed to complete the units, SERO Institute will assist them in finding suitable Industry
Experience placement as required.

How do I get Industry Experience if I am not already working in a kitchen?

SERO Institute is committed to helping all Commercial Cookery and BoH Students find suitable Industry
Experience Placement. SERO currently has in place Industry Experience Agreements with 5 and 6‐star
employers such as the Sofitel Hotel Group, QT Hotels and Resorts, Novotel, Katarzyna Group and the
Hilton Hotel chain. SERO works closely with local employers to assists students to find Industry
Experience during the course, open the door to future career opportunity and obtain long term
successful careers in Australia and throughout the world.
